Traditional Irish Pancakes

As long as I can remember we always loved when pancake Tuesday arrived in February.  It is a age old tradition in Irish households to make pancakes the night before the event of lent. What great excitement when the pan was heated and the batter was ready and we waited patiently for our turn to get the piping hot pancake.  Yum.

100 g / 4oz plain flour
pinch of salt
1 egg
250ml / half pint milk
12g / half oz butter melted

  • Sieve flour & salt into a bowl.
  • Make a well in the centre, break in the egg and add half the milk.
  • Gradually work in the flour and beat until mixture is smooth.
  • Add the remaining milk and melted butter gradually.
  • This amount will make about eight pancakes so we normally double the recipe.
  • Melt a little butter in a small heavy frying pan.
  • Pour enough batter to coat the pan thinly and tilt pan to cover evenly.
  • Toss or turn the pancake and fry on the other side until both sides are golden brown colour.

Enjoy with some freshly squeezed lemon juice, sugar and some double cream.

Abhainn Ri Irish Soda Bread

Every guest arriving at Abhainn Ri receives an Abhainn Ri home baked soda bread with some of our farm eggs.   My fondest memories of brown soda bread and boiled eggs are having them as a small child in my grandmothers house on a Saturday evening.   My grandmother baked bread every day as she had a very large family and I always loved the fresh smell of baking bread in her house.   When I married my mother in law was also a wonderful bread maker and encouraged me to make it for my family.
I hope the tradition of making soda bread shall continue for many years to come.  I am often asked by guests for the recipe to make this very traditional simple Irish bread.
Abhainn Ri Irish Soda Bread
225g / 8oz Stone ground wholemeal flour
225g / 8oz plain white flour
1 tablespoon Oat bran
1 tablespoon Wheat germ
1/2 (half) teaspoon bread soda (bicarbonate of soda)
1/2 (half) teaspoon salt
425 ml (15 fl oz) Buttermilk
2lb loaf tin

Preheat oven to 200C / 400F / Gas 6

Mix all the dry ingredients together in a large bowl. Gradually mix in the buttermilk to give a moist dough. Place in a a greased 2lb loaf tin and bake in the oven for 45 minutes. remove from tin and tap the bottom of the bread, if it sounds hollow the bread is cooked. If you wish a really crispy crust return to the oven without the tin for a further 5 minutes. When cooked place on a wire rack to cool. Serve with creamy butter and home made jam.
